株式会社酒八(SAKAHACHI INC. KYOTO)のルーツには、昔日本酒の蔵元を営んでいた頃の姿があります。 蔵を構えていた滋賀県守山市は、旧街道である中仙道沿いに位置し、琵琶湖を近くに臨み、豊かな水に恵まれた土地でした。京都発の宿場町「守山宿」として栄え、醸すと暮らすが地域の中に根付きつつ、往来客を交え街道沿いで営まれてきた時代の記憶です。 (写真:蔵元の頃の姿。柱に酒八の文字が見える。) 現在は醸造はしておらず、大きな日本酒の蔵が当時の姿を今に伝えるのみです。 もう一度日本酒の作り手へ、そして「日本のクラフト酒類を世界に」。
We at Sakahachi Inc. Kyoto have our roots in sake brewing. Our brewery was located in Moriyama City, Shiga Prefecture, facing the main road Nakasendou, one of only two roads connecting Kyoto and Tokyo in the past. Lying right next to Lake Biwa, Moriyama was a town blessed with fresh water. It was the inn town closest to Kyoto, an inn town flourishing with sake breweries and rest houses, and visitors were constantly coming and going. *picture : Our old sake brewery. On the pillar in the back you can see the characters for Sakahachi (酒八). We currently don’t brew any sake. The remnants of our old sake brewery tells of our distant past. We want to brew once again, and spread Japanese craft sake to the world.
当時、旧街道から母屋に入るとそこはカウンターでした。 そして土間を中心として家族や蔵人が暮らす座敷と続き、背面に日本酒の蔵を構えます。 敷地の最後尾は、酒の舟出し場である川でした。
Back in the days, as soon as you entered the house you were met by a counter. If you continued further in, you would come to the living quarters of our family and the sake brewers and behind that was the brewery building. At the far end was the river, where boats came to pick up sake.
カウンターでは、醸した日本酒「千代司」を陶器のボトルで量り売りしたとのことです。 持ち帰り、なくなればまたカウンターに立ち寄り満たしたといいます。
At the counter you could buy our sake, Chiyo-tsukasa (千代司), in ceramic bottles by weight and bring it home. As soon as it was finished, you could come back to the counter and refill it.
時を遡り現代、まずカウンター部分をCRAFT BEER & SAKEの酒場として、京都・東京を中心に再構成することを考えました。クラフトビールも日本酒も同じ醸造酒ですが、よりカジュアルに両者を楽しめる場所を目指しました。酒場としての空間には、街の延長線上に佇む様子や、豊かなコミュニティが息づくよう、想いを込めています。
Tracing back to our roots, we wanted to create bars that started with a meeting at the counter. We chose Kyoto and Tokyo and refurnished old buildings into bars where you can enjoy both sake and craft beer in a casual environment. For us, bars are the extension of the cities. Places where communities are prospering.
また、現代は本社を京都におきます。 土間を中心とした母屋は、京都銀閣寺近くの本社と、渋谷神宮前の東京オフィスへと場所を移し再構築しました。土間は、かつて地域や仲間に開放された暮らしと仕事の場でした。働き方が多様化する今、街や人に対してオープンな暮らしのあり方、仕事のあり方を模索していきます。
We now have our head office in Kyoto. Our old house has moved and been remodeled into our head office in Kyoto near the Silver Pavilion and our Tokyo office in Shibuya Jingumae. Our house in Moriyama was a place open to the town and to the people. Nowadays, when our jobs become more diverse, we are still trying to create the same feeling of openness.
酒八が蔵元時代の流通は、水運が担うところが大きかったとのこと。酒の舟出し場であった川から発想したのが、姉妹会社であるDIG THE LINE株式会社(DIG THE LINE INC. KYOTO)です。 スローガンは、Connecting Craft。点と点とを繋げば線になり、幾重にも組み合わされる中で面へと発展していきます。点とは街やそこに暮らす人そのものであり、人の手で紡がれる手仕事でもあります。ひとつひとつ見出しながら、川の流れのように遠く未来へと繋がれていくよう願いを込めました。
When we were still producing sake, most of our distribution was made on water.From the river that once carried our sake, the idea for our sister company Dig the Line Inc. Kyoto was born. Our slogan is “Connecting Craft”. If you connect two points you get a line, and if you connect even more points it eventually expands into a whole community. The points in this case being people, places and the craftsmanship of the people involved. We are continuously finding new points and we are striving to connect them, far into the future.
DIG THE LINEでは、ヨーロッパからクラフトビールのインポートサービスを展開し、国境を越えてコミュニティを纏いつつ、いずれサカハチの酒の流通ルートを内製化することをミッションとします。
At Dig the Line we import craft beer from Europe, creating a community that transcends the borders. Our mission is to use this community to bring the sake of Sakahachi to the world.
その表現として、クラフト酒類を買える機能を備えた、リアルショップを京都と原宿につくりました。
いずれもボトルショップとバーを併設しています。
オンラインストアと連動しながら、ストーリーやつくり手の想いを伝える機能を担います。
As a first step we opened bottle shops and bars in both Kyoto and in Harajuku, Tokyo where you can buy craft beverages, either to enjoy at the bar or to bring with you home.
We also have an online shop, and are always trying to convey the stories and wishes of the people creating the beverages.
幾重にも重なり育ちつつあるラインは、想いの交錯でもあり、過去から未来へと続いていく時間の流れそのものでもあります。世界中に、ラインに通じるドア(扉)を構築していきます。
When the lines pile up and spread, they become like an intersection of wishes, like the flow of time, connecting the past to the future.
We will construct doors where these lines lead, all over the world.
私たちは、遠く昔街道沿いに営まれてきた風景をひとつずつ丁寧に紐解きながら、再構築していくことを考えます。そしてもう一度作り手へと。新しい線は紡がれ出したところですが、この先の大きな未来へ続いていくよう願いを込めて。2022年 春
While we are looking back at our old sake brewery facing the old main road, we are also planning for the future. And to once again brew sake. We have drawn a new line, and our wish is that it will continue far into the future. 2022 Spring
